Braised pork shanks, potato/celeriac purée with lovage, lingonberries and apple, baked parsley root and sauce demi-glace.
Tart with white chocolate mousse, blueberries with honey and lemon, 48 % double cream, yoghurt snow and grated caramelised cheese.
